A Complete Meal


This is a balanced meal that will have you feeling full and satisfied. It's lean, packed with protein, and all ingredients are easily found in the grocery store. To fit your dietary needs, you can substitute the turkey in this recipe with firm crumbled tofu, ground chicken, ground pork, ground beef, lentils, or quonia. These substitutions will give you the protein you need to keep a balanced plate.


This meal takes some time to prepare. We have included secondary instructions for a faster way to get dinner to the table in 20 minutes for those who would like a quicker alternative. Using an Epicure Multipurpose steamer cuts the time down significantly. If you do not have this specific brand, any steamer made for microwave use will work.


Ingredients

  • 4 medium sweet potatoes

  • 1 onion

  • 2 medium squash

  • seasoned salt to taste

  • 1 pound organic turkey ground meat

  • 2 cups Brussels sprouts

  • 2 cloves garlic

  • balsamic reduction

  • EVOO

  • Fresh Green beans

  • Cherry tomatoes


Baked Sweet Potato Directions

  1. Wash, dry, and pierce your sweet potatoes several times with a fork.

  2. Wrap each one in aluminum foil, sealing the ends.

  3. Place on a baking sheet.

  4. Bake your sweet potatoes at 450 degrees for about an hour or until a fork pierces them effortlessly.

Quick alternative cooking method: After washing your sweet potatoes and piercing them with a fork, place them in an Epicure Multipurpose steamer and cook on high for eight minutes or until a fork easily pierces them. Remove the potatoes and wipe clean.


Turkey Directions

  1. While your potatoes are baking, dice ½ a large onion and 2 medium squash.

  2. In a large pan, add the onion, squash, and turkey.

  3. Season with seasoned salt or salt and pepper, and cook until turkey is no longer pink and vegetable are soft.

  4. Drain all liquid and put it aside in a covered dish to keep warm.

Quick alternative Cooking method:

  1. Add the onion, squash, and turkey to the Multipurpose steamer.

  2. Cook for 4 minutes, break up the turkey meat, and drain.

  3. Add a few extra minutes if the turkey is still pink and the vegetables do not easily pierce.

  4. Place the mixture in a bowl and cover.


Brussel Sprouts Directions

  1. Cut Brussels sprouts in half and mince garlic.

  2. Place them in an 8×8 baking dish.

  3. Drizzle with balsamic reduction and oil, and toss to coat.

  4. Bake for 10-15 minutes at 350° or until the sprouts are soft.

  5. Remove from oven and drizzle with more balsamic.

Quick alternative cooking method:

  1. After cutting, add Brussels sprouts, oil, garlic, and balsamic to the Multipurpose steamer and cook on high for about 4 minutes.

  2. Remove and drizzle with balsamic.

  3. Wipe out the steamer.


Green Bean & Tomato Directions

  1. In a medium pot, add water; the amount will depend on how many green beans you make.

  2. After the water boils, add the green beans to blanch for 1-2 minutes, do not thoroughly cook.

  3. Drain the green beans in a colander and rinse with cold water.

  4. Slice the tomatoes in half.

  5. Add both to a bowl and drizzle with EVOO and balsamic—season with salt and pepper to taste.

Quick alternative cooking method: Add the green beans to the Multipurpose steamer and cook for 2 minutes on high.


Plating Directions

When the sweet potatoes are done, cut them open and top with ½ cup of turkey mixture. Then, plate your meal and enjoy!
