What better way to end the summer season than with these scrumptious turkey burgers! This recipe feeds a crowd, so feel free to cut it in half for a family dinner. Serves 12
Ingredients 3 pounds ground turkey 1 cup grated zucchini 1/4 cup cooked quinoa 1/4 cup finely diced onion or 1 teaspoon Epicure Toasted Onion 2 egg whites, lightly beaten 1/4 cup chopped fresh parsley 1 clove garlic, peeled and minced or 1/2 teaspoon Epicure Minced Garlic ·1 teaspoon salt 1/4 teaspoon ground black pepper 12 buns or make lettuce buns* Sliced tomatoes and lettuce to garnish
Directions 1. Mix ground turkey, zucchini, seasoned bread crumbs, onion, egg whites, parsley, garlic, salt, and pepper in a large bowl. Form into 12 patties. 2. Grill until done to your liking. 3. Top with lettuce and sliced tomatoes.
*Use lettuce as a bun for a gluten-free, low carb option.
Skillet option: Heat a skillet over medium heat; arrange patties in skillet and cook until no longer pink in the center and juices run clear, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
