Vanilla Coconut Oatmeal


Summer is almost here, and with it, tropical flavors! This oatmeal will conjure up thoughts of a warm breeze, vacation time, and ocean waves. It's quick and easy to make, and the best part, you can change the ingredients to your liking. Substitute pineapple or mango for the banana. Use all three for a super tropical breakfast. Substitute agave for the honey. Toast your coconut for a different flavor profile.


Any way you make it, this oatmeal bowl is sure to satisfy!


Ingredients

1/3 cup quick-cooking gluten-free oats

2 Tablespoons unsweetened coconut

1/2 Banana

Drizzle of raw, unfiltered honey

Enough water or nut milk of your choice to cover the oats


Directions

Place the oats, collagen, coconut, water, or nut milk in a microwave-safe bowl and stir until combined.

Microwave* covered with a paper towel for one minute.

Remove with caution from the microwave, uncover and stir.

Slice banana and place on top of the oatmeal.

Drizzle with honey and enjoy.


*If you do not have a microwave, this can be made on the stovetop by following the directions on the oats package. Add all the same ingredients as you would in the microwave directions and cook until oats are tender. Top with sliced banana and honey.
